Figs, Gorgonzola and spinach are not everybody’s cup of tea. With their intense and extraordinary notes, they give this towering appetiser just the right kick. Even the toughest critic will develop a taste for it.

Ingredients
3 figs
1 ripe pear
30 g young spinach leaves
½ red onion
100 g Gorgonzola
1 garlic clove
3 slices of French bread
Olive oil
Salt
Pepper

Preparation time: 20 minutes
Everything is tutti frutti! First, wash the figs and the pears, and chop them into thin slices. Now wash and dry the spinach. The onion should be chopped into fine strips, and the garlic into thin slices. Then crumble the Gorgonzola into fine pieces.
Now fry the baguette, together with the garlic, in olive oil until golden.
Next, add the figs, pears, spinach and onion to a mariella mixing bowl, mix everything together, and add salt, pepper and a little olive oil for taste. Now add the Gorgonzola crumbs. Divide the mixture between three food rings, and a crispy slice of crostino to each of the towers. Press the crostino slices down lightly, cover, and refrigerate. Remember to tip the towers out of the rings before serving. Bon appétit!
