A sweet waffle tower with fresh berries and whipped cream. The foundations of this tasty treat are wonderfully crisp waffles. Crispy on the outside and fluffy on the inside. As it should be!
For extra crispy waffles, it’s important to separate the eggs properly. If even the slightest bit of yolk gets into the egg white, it’s all over. Then you’ll have to go right back to the beginning. Make sure that the mariella mixing bowl is completely clean and clear of any grease.
We separate our eggs using enzo. enzo is a super practical kitchen aid used to separate eggs easily and cleanly. Simply crack the eggs on the integrated edge and tip into the separator. The egg white will flow into the secure catch tray. The egg yolk will remain in the recess of the egg separator. Thanks to the separator’s smooth surface, you can be sure that the egg yolk will not break. The egg white will run into the collection tray.
For the batter:
140 g soft butter
3 medium eggs
150 g sugar
250 g flour, type 405
100 g mineral water
1 tsp vanilla extract
200 g single cream
100 g mascarpone
270 g cream cheese
100 g forest fruit preserve
1 tsp vanilla sugar
300 g berries of your choice
Icing sugar for sprinkling
The flour and mineral water are best incorporated in three lots. Carefully fold in the egg whites beaten into stiff peaks using a whisk and leave the batter to rest in the fridge for approximately 30 minutes.
You can prepare the cream while you wait. First, the topping: Whip the cream until firm and chill. To keep everything on track, you should now mix the mascarpone with the cream cheese, preserve and vanilla sugar. Gently stir in the single cream a bit at a time. Now the cream needs a little break to chill while the waffles are baked and cooling.
Heat the waffle iron and bake approximately 6 waffles in succession. Leave to cool completely on a cooling rack, this will make them crispy.
And now it’s time to start constructing: Coat each waffle with the cream and sprinkle them with berries. For cheats and tower constructors, stacking the waffles on top of one another is the perfect way to create a cake. Leave the cake to cool and, to finish, decorate with fresh berries.
