It’s not just the name that will put you in a good mood: Chickpeas are delicious, and very healthy. Did you know that chickpeas help to strengthen your bones, are a good source of iron, and keep you young and beautiful? That makes our colourful chickpea salad taste twice as nice!
Ingredients
1 tin of chickpeas (drained net weight: 225 g)
1 large tomato
100 g cucumber
2 spring onions
100 g feta cheese
2 mint sprigs
3 parsley sprigs
1 tsp cumin
1 pinch of cayenne pepper
Salt
Pepper
1 untreated lemon
2 tbsp olive oil

Preparation time: 30 minutes
Use a fabienne colander to wash and drain the chickpeas. Now wash and dice the tomato and cucumber. Wash the spring onions, and cut them into fine rings. Now it’s the feta’s turn. Crumble it a little, and put it to one side. Pluck and finely cut the mint and parsley sprigs.
And now for the chickpeas. Purée them – along with the cumin, cayenne pepper, salt and pepper – using a hand blender, until you get a rough mixture.
All’s well that ends well: Finally, mix everything well in a mariella mixing bowl, and season the chickpea salad a little with olive oil, lemon zest, and a splash of lemon juice. Put the colourful salad into three food rings, cover, and refrigerate. Tip everything out onto a plate, garnish, and serve!
