Panna cotta with strawberry salad
The cream of the crop!

The name says it all: Panna cotta is Italian for “cooked cream”. That is just what you have to do, to make this tasty pudding. Boil the cream, chop up some strawberries, and this classic dessert is ready.

 

Ingredients
5 leaves of gelatine
750 ml cream
30 g sugar
1 pinch salt
1 vanilla pod
500 g strawberries

Preparation
Preparation time: 30 minutes
Cooling time: 3 hours

Firstly, grease the dessert rings with sunflower oil. Then refrigerate the rings.

Next, soak the gelatine in cold water until it is soft.

Boil the cream, sugar and salt. Cut the vanilla pod in half lengthways, and scrape out the pulp. Add the pulp and the pieces of the pod to the cream, and boil for about ten minutes.

Then sift the cream, pod pieces and pulp through a fine sieve, and into a mariella mixing bowl and dissolve the drained gelatine into the hot cream. Now it is time to cool the liquid mixture. Put it in the fridge until it starts to set. Stir it once more, and then divide it between the dessert rings. Refrigerate for around three hours.

Now for the “salad”. Firstly, wash and clean the strawberries, and leave them to drain. Half of the strawberries can be puréed and made into a sauce; the other half can be chopped up, and the sauce can be poured over them.

Finally, tip it out on small plates and remove the panna cotta from the dessert rings with a small, sharp knife. Before serving, garnish with the strawberry salad. Simply irresistible!
