Nobody lives on bread alone. That’s why we like to add vegetables, herbs and dressing. Et voilà: an Italian-style bread salad. It’s easy to prepare, and very tasty!
Ingredients
6 slices of ciabatta, as thick as your finger (ideally one day old)
1 tbsp vinegar
3 tbsp olive oil
1 tsp honey
Sea salt flakes
Black pepper
1 red onion
2 tomatoes
½ a yellow pepper
1 tsp capers
2 tbsp small, pitted, pickled olives
2 basil stems
10 rocket leaves
Preparation
Preparation time: 15 minutes
Start by tearing the bread into small pieces. Then stir the vinegar, olive oil and honey into a smooth mixture, and add salt and pepper to taste. Soak the bread pieces in the mixture.
Now roughly dice the onion and the washed tomatoes. You can be a little more careful with the pepper, and chop it up more finely than the tomatoes and onion. Mix everything – together with the soaked bread, capers and olives – in a practical mariella mixing bowl.
The same in green: Pluck the basil from its stems, roughly chop the rocket, and then mix both in with the salad. Add more seasoning to your bread salad, and then put it into the food rings. Cover, and place in the fridge. Done!
